TL;DR: experimental templates should not be used on content pages!

When experimenting with templates, users are strongly encouraged to use user sandbox pages, because mistakes in templates can break a lot of pages. However, it is not always possible to properly test template functionality in this way; eventually, the template has to be rolled out by moving it to the Template: namespace, and then it needs to be tested again.

Experimental templates are templates that are in this latter phase of development; they are essentially working, but not quite yet ready for prime time. This label warns other users not to start using the template in anger just yet.
